Thai Green Monkfish Curry

4 Monkfish Fillets (cut into pieces)
1 large onion (peeled and sliced)
1 teaspoon Thai green curry paste
2 tins of coconut milk
Half a pint of vegetable stock
Juice of 2 limes
2 tablespoons of sugar
Half a bunch of fresh coriander
Salt and pepper


For the sauce sweat the onions in a pan till lightly colored and soft. Add the Thai paste and cook for a few minutes.
Add the coconut milk, stock, lime juice, sugar and simmer for 10 minutes. Then add the chopped coriander and season to taste.
To cook the Monkfish heat a little vegetable oil in a pan, then sauté the pieces till lightly colored.
Add the sauce to the monkfish and simmer for 10 minutes
Serve with basmati rice
